Lotus Root (莲藕) and Pork Soup

Mom makes this soup often.  It's pretty easy to make and so delicious!

  • Lotus Root (莲藕) - 2 x 5" long roots
  • 2-4 chunks of pork neck
  • salt
  1. Wash and soak the lotus root 
  2. Bring large pot of water to a boil
  3. Cut lotus root into thin slices, add to boiling water
  4. Add pork neck
  5. Add plenty of water, bring to a boil on high, then lower to medium heat
  6. After 30 minutes, add more water
  7. Cook for another 30-60 minutes until pork is tender
  8. Add 1 teaspoon salt
