- Lotus Root (莲藕) - 2 x 5" long roots
- 2-4 chunks of pork neck
- salt
- Wash and soak the lotus root
- Bring large pot of water to a boil
- Cut lotus root into thin slices, add to boiling water
- Add pork neck
- Add plenty of water, bring to a boil on high, then lower to medium heat
- After 30 minutes, add more water
- Cook for another 30-60 minutes until pork is tender
- Add 1 teaspoon salt
